We’ve picked out one of our favourite, refreshing, non-alcoholic recipes to share, a cocktail perfect for lazy summer nights whilst watching the tennis.
The ingredients are easy to buy and prepare at home, but do remember: fresh is best – and absolutely imperative, especially when it comes to ingredients like lemon and lime juices.

Bright, refreshing and herbal, this non-alcoholic is perfect for the Lemon, Lime & Bitters drinker. Fresh herbs give this cocktail great complexity & depth, the pineapple brings body, lemon juice for balance and soda gives great fizz.
¾ ounce/22.5 ml Freshly squeezed lemon juice
¾ ounce/22.5 ml three herb syrup
1 ounce/30ml Fresh pineapple juice
Top with chilled soda water
Measure the first three ingredients into a hi-ball glass, fill the glass with ice, top with soda water & stir. If needed, top with more ice & soda, and garnish with a sprig of rosemary.
Three herb syrup:
20g each fresh rosemary, thyme, sage; 500g water & 400 to 500g white caster sugar
Add three herbs & water into a saucepan, bring to the boil, then lower the heat and simmer for 5 minutes. Remove from the heat and strain through a fine sieve, then let the liquid cool to room temperature. Weigh the herb infused water, then stir in an equal weight of white caster sugar until the sugar is completely dissolved. Once made, this can be kept in the fridge for up to two weeks.
